Chinese Yam — The Sweetness Hidden Deep in the Mountain Soil
and the Years Farmers Spend Growing Roots
The story of Chinese yam is always half-hidden beneath the soil.
In the rainy mountain town of Shuangxi, autumn arrives as the vines begin to yellow, while beneath the earth, Chinese yams quietly come into their own. During those unseen months, they grow inch by inch deeper into the ground, gathering the mountain rain, the moisture of the valleys, and a season’s worth of care from local farmers into each firm, plump root.
Growing Chinese yam is a lesson in patience with the land. From planting to harvest, its true treasure remains hidden underground. Farmers watch the vines above the soil, reading the weather and listening to the signs of the earth. When harvest time finally comes, they carefully follow the direction of each root, gently digging away the soil little by little.
The deeper the yam grows, the less it can be rushed. One careless move can snap the root—and with it, months of patient work beneath the earth.
And that is exactly why we love Shuangxi's native Chinese yam.It is not only its pleasantly chewy, smooth yet slightly creamy texture, with a subtle earthy aroma, that makes it special. We love it because it feels so much like Shuangxi itself—quiet and unassuming, keeping its finest treasures hidden deep within.
From farm to table, Chinese yam can become a warm and comforting homemade soup. It can also be combined with honey, sweet potato, and coconut, then shaped by hand into a delightful Honey Yam, Sweet Potato & Coconut Ball. In this way, a local crop takes on a new form—and gives travelers one more reason to remember this place.
At Note Shuangxi, we have made Chinese yam one of our Shuangxi Green Treasures not simply because we hope visitors will take home a bag of local yams. We invite travelers to follow its roots and discover the mountain town from which it grows.
Come by train. Wander slowly through century-old railway landscapes and local communities. Enjoy a Tamsui-Kavalan Trails Bento, made with ingredients from local farmers. Discover how Chinese yam takes center stage as the comforting seasonal star, step into neighborhood shops, and see how a distinctive local crop can inspire many different uses in the hands of the people who call Shuangxi home.
Welcome to Shuangxi. Let Note Shuangxi show you the way.We walk a little farther into the mountains and dig a little deeper into the flavors of the land. We discover this place on foot. With every Tamsui-Kavalan Trails Bento, we support at least eight local farmers and producers. With the Shuangxi Green Treasures Passport in hand, travelers can collect stamps through green consumption and turn each purchase into support for the local community.
So what remains after a journey is more than photographs. It becomes a force that helps this place thrive sustainably—and, like the Chinese yam beneath our feet, continue to put down deeper roots.
